Amelia's favorite dish

In this post I'm going to share with you how to make fried chicken and biscuits. In an article I read it said that fried chicken and biscuits was Amelia's favorite food and her mother always made it for her.

What you'll need:

1 1/2 cups of buttermilk
3 pounds of chicken
2 tablespoons of chopped fresh parsley
2 1/2 cups of flour
1 teaspoon of dried oregano leaves
1 teaspoon of salt
1/2 teaspoons of pepper
1/2 teaspoons of baking soda
A teaspoon of salt
1/4 cup of shortening
1/4 cup of chicken broth
1/4 cup of butter
2 1/2 teaspoons of baking powder
1 tablespoon of sugar

Find a bowl and place the chicken in it. Marinate for 30-60 minutes after pouring the buttermilk on the chicken. Mix 1 cup of flour, parsley, oregano, salt and pepper in a separate bowl. 3/4 of buttermilk is to be poured into a casserole dish. Make sure to set aside any extra flour and buttermilk.

Over medium high heat melt the shortening plus the butter in a skillet. Add the chicken fry for 6-8 minutes till brown. Put the buttermilk in a casserole dish then place chicken on top.

Have a measuring cup equal to 1/3 and strain the fat from the skillet, to put it into the cup. Add butter if their isn't enough fat. Scrape the brownings off the skillet and add broth. Pour the broth all over the chicken. Bake for 1 hour at 375 degrees Fahrenheit. Recipe

Mix the remaining flour with sugar, baking soda and the baking powder. Add remaining buttermilk and 1/3 cup of fat to make the dough nice and soft. Use a rolling pin to flatten the dough out then cut the dough into 2" rounds. Do this while the chicken is in the oven.

Have an ungreased cookie sheet and place the biscuits on the sheet. Bake for 20-25 minutes.
